Hayden has been experimenting with some serious baking lately. First, there was the obvious choice of banana bread (with chocolate chips). Then, with fall approaching, pumpkin muffins were the next hit (it was grandma’s tried and true recipe). What better thing to do with zucchini, but to make it into a loaf or muffins AND add lots of chocolate chips. Hayden grated 2 zucchini to make about 3 cups. His little sister helped to measure and stir out the flour and sugars. She also liked cracking those eggs. Lots of cocoa made them super chocolatety. If you didn’t know the main ingredient, nobody would know it was packed with zucchini. YUM!!!
